    複香型白酒

    複香型白酒
    複香型白酒是指那些具有兩種以上香型酒混合香氣的白酒,包括兼香型(濃香型與醬香型兼而有之)、芝麻香型、鼓香型等。特點是既有醬香型酒的芳香幽雅,又有濃香型酒的濃郁窖香。主要代表有陝西西鳳酒、貴州董酒等。
        所謂“複合”香型,亦即兼兩種或兩種以上基本香型而備之。一般地說,它既具有複合的各香型的基本風格特徵,又具備複合成型後微量香味成分的個性特徵;而且其生產工藝多種多樣,百花齊放,各具特色。1. 複合香型白酒簡介1.l 清香、濃香的複合此類酒兼具清香、濃香的風格特徵,微量成分介於清香、濃香之間。典型代表是鳳型中的西鳳酒、太白酒,其具有多類型的香氣,含有多層次的風味,集清香、濃香之特長按不同配比融為一體.清而不淡、濃而不釅。
       兼香型,通常又稱為複香型,即兼有兩種以上主體香氣的白酒
    這類酒在釀造工藝上吸取了清香型、濃香型和醬香型酒之精華,在繼承和發揚道統釀造工藝的基礎上獨創而成。兼香型白酒之間風格相差較大,有的甚至截然不同,這種酒的聞香、口香和回味香各有不同香氣,具有一酒多香的風格。兼香型酒以董酒為代表,董酒酒質既有大曲酒的濃郁芳香,又有小曲酒的綿柔醇和、落口舒適甜爽的特點,風格獨特。
    以上幾種香型只是中國白酒中比較明顯的香型,但是,有時即使是同一香型白酒香氣也不一定完全一樣,就拿同屬於濃香型的五糧液、瀘州老窖特曲、古井貢酒等來說,它們的香氣和風味也有顯著的區別,其香韻也不相同,因為各種名酒的獨特風味除取決於其主體香含量的多少外,還受各種香味成分的相互烘托、緩沖和平衡作用的影響。
    中國白酒的釀造首先要製曲,即用熟糧食和菌種混合培養,製成曲後,再和糧食混合約時進行糖化和發酵製成糧食酒、再蒸餾。製曲時使用豆類、麥類等各種糧食,製酒發酵時主要用高粱等。
